Try these delicious dressings, as suggested by
Lucas Hollweg - Sunday Times Style magazine.

Just mix the ingredients and leave for one hour before serving. Quantities based on two dozen oysters.

Shallot Vinegar...
- 2 small shallots, very finely chopped
- 5 tablespoons red-wine vinegar (or cider vinegar)
- 1 tablespoon caster sugar
- A grind of black pepper

Chilli, Lime and Coriander Dressing...
- 1 long red chilli, de-seeded and then very finely chopped
- 2 tablespoons sugar
- 4 tablespoons fresh lime juice
- 2 tablespoons fish sauce
- 1 tablespoon coriander leaves, finely chopped

Ginger and Soy Sauce Dressing
- 1 tablespoon fresh ginger, very finely chopped
- 1 tablespoon spring onion, very finely chopped
- 4 tablespoons rice wine vinegar
- 2 tablespoons light soy sauce
