Purists say you shouldn’t add anything to oysters but a squeeze of lemon or a dash of Tabasco so this is where we’ll start.

Margarita Shots...
The perfect way to start the evening. Here we give the oysters a South American flavour, with lime and a hint of Tequila.

- Plenty of ice, for serving
- Zest and juice of 4 limes
- 3-4 tablespoons white tequila, to taste
- 20g pack fresh coriander, chopped
- 2 tablespoons extra virgin olive oil

Make the margarita dressing, mix together the remaining ingredients in a small bowl. Spoon a little dressing over each oyster and serve immediately!
